Ang Lee could be a great choice. He did really quiet and subtle work with both Brokeback and Lust, Caution -- so he might get the fable angle of Life of Pi. I actually think it would be a really simple adaptation too, it's got kind of a "Old Man and the Sea" struggle vibe. I dug Life of Pi too. Ang Lee could be a great choice.
